Smoked BBQ Brisket Party

Did my annual Smoked BBQ Brisket Party Rave (aka - my half birthday) with lots of great DJs and, of course, kilos of brisket & pulled pork. This year, I ended up cooking 4 packer briskets in my offset smoker which actually turned out to be far more difficult than 3 packers briskets (as per previous years).

In the videos below, I prepare and load a whole beef brisket into my oak-fired offset smoker using techniques inspired by Aaron Franklin's famous Texas BBQ method, showing how I managed to position four *yes, FOUR briskets in the smoker before an 18-hour low-and-slow cook, while battling typical rainy UK weather.


The problem was space. Three briskets allows for good, strong airflow between the briskets whereas four just ended up being way too tightly packed in for my liking, resulting in areas of the brisket not taking on smoke as I would have liked.


Managed to get all the briskets in, in the end, so all was good.
