UK BBQ beef experiments 

I'm always experimenting / trying new technique and cuts for BBQ - so today, with beef silverside at a bargain price of £6 per KG at Tesco, I'm trying it out (even without any intramuscular fat) with a salt, pepper & French Plein Sud spice rub (I was in France last week, so I stocked up on cooking ingredients / inspiration).

Pulled BBQ Beef


The 'fat cap' melted off quickly and with foil tray underneath to capture all the tallow, so after 4 hrs in the Kamado style smoker fueled by raw oak logs converted into embers + lumpwood charcoal, I dropped the cut into the slow cooker to cook 'confit' style for a further few 4 hrs in the tallow.
I'm expecting to end up with more of a pulled smoked beef texture than brisket texture but let's see what happens!

Basically, in a phrase, "it ain't brisket!"

End up pulling it, it didn't smell like smoked brisket during cooking process, so went more BBQ style with it. I am guessing, it's the lack of connective tissue / gelatine in silverside cut which makes for a completely different taste profile even through the chemistry if the cooking is / was the same. Managed to make some juicy pulled beef that is still decent enough with nice pink smoke ring.
